What is an open sandwich?

In a few words, a sandwich without bread on top. So, in a manner of speaking, not a sandwich at all, really.

Across Scandinavia, open sandwiches are part of the every day diet.  Slices of healthy rye bread or soft sourdough or cereal bread are used as a base and topped with anything from herring to salmon, roast beef or pates. 

The kind of rye bread we use contains a lot less processed stuff than most other sandwich breads. The bread is organic, wheat free but still soft, moist and scrumptiously delicious. It is made from whole rye kernels and other goodies and packed with fibres - all round good for the belly and the whole system. Our sourdough and cereal breads are baked according to traditional recipes and in addition we offer a range of other Scandinavian specialty breads, such as limpan and rye flat wraps.

Lucy Thomas, who is a Senior Product Developer at innocent drinks, is a big fan of people eating more rye bread to be that bit healthier: 'Not only is Rye bread an excellent alternative to normal wheat-filled bread, it also contains wholegrain goodness (B vitamins, vitamin E and lots of minerals) and is a great way up upping your dietary fibre intake'.

As the Earl of Sandwich worked out, two pieces of bread means less mess. But it also means a lot of bread and at Scandinavian Kitchen we think people eat enough bread as it is and prefer to focus on the good stuff on top to create a healthier balance overall.
